Apples, Pumpkins, Friends, and Roosters

So far these two months of fall have been filled with amazing things: hiking in autumn woods, reading with a blanket up to my chin, jogging and feeling chilly air fill your lungs, picking apples with great friends, celebrating Octoberfest, spending time at the library, meditating and offering gratitude at So Shim Sa, watching movies that touch your heart, and sticking to my 4AM wake ups.

Today A and I went apple picking with some close friends. We took a ride up into the orchard on the old tractor and wandered around between rows of Red Delicious, Fuji, Empire, Granny Smith, and Macoun apple trees.  After filling the basket more than necessary, we came down in the same old tractor and had hot cider and cider donuts.

A and I now have about 20 lbs of different apples. I am planning to do the following things with them: bake an apple pie, make apple sauce, and an apple crumb.

Bakers and cooks out there, is there anything else I can do with the apples? (Besides eat them just as they are? 🙂 Thanks!
